Mushrooms’ year-round growing season  means that they’re a great ingredient to accompany warm weather bites. This past week, spring and mushrooms were on the mind of several food bloggers with scrumptious mushroom dishes popping up every day. We picked a few of our favorites to make your grocery list a breeze for the weekend’s festivities.

Breakfast/Brunch

With Mother’s Day this Sunday, a Mushroom and Gouda Frittata from She Wears Many Hats is the perfect meal for a breakfast in bed treat or a large gathering.

If you’re interested in putting a savory spin on a classic dessert dish, check out this video from Chef Traci Des Jardins featuring Wild Mushroom Bread Pudding.

Dinner/Lunch

For those nights when you want take-out style food, in your own home,a Kale,Mushroom and Ricotta Calzone from Two Peas and Their Pod is just the ticket.

Family Style Dinner

Comfort food is often reserved for fall and winter,but there is nothing like a dish the entire family can dive into year round. An Italian Chicken, Mushroom and Zucchini Skillet is the perfect dish for a Sunday night dinner.

Appetizers

As a topping or a base for stuffing, mushrooms are the perfect ingredient to kick off any meal. Spinach Artichoke Stuffed Mushrooms from How Sweet It Is reinvents classic dip and Mushroom and White Bean Crostinis from Dine and Dish are wonderful for a spin on an Italian favorite.

Portabella Mushroom Love Note

Every day offers a reason to celebrate the food we love, but when there is an official day designated to the mighty mushroom, it’s important to take the celebration up another notch.  April 16 is recognized as the Day of the Mushroom and we’re honoring our favorite fungi in the most delicious way possible – multiple mushroom recipes.

A New Year is upon us, and when it comes to stocking up the kitchen with healthy ingredients, discovering the right balance between time, taste and health can make the weekly shopping list a challenge.  Luckily, there is a secret to success this New Year, and it starts with superfoods.

When a meal starts with mushrooms you’re already off to a great start, but you don’t want to risk your family getting tired of mushrooms served in the same way every week. That’s where the entire spectrum of superfoods comes into play. With a few delicious ingredients you can have a new meal every week, full of flavor and nutrients. This month we’re celebrating superfood meals on Facebook and our featured recipe tab, but the recipe collection doesn’t have to end there. Fried Eggs, Mushroom and Kale Skillet

My family loves to eat, especially first – and second – breakfasts. Breakfast is a comfort food for many of us so it makes sense to have it twice. With the holidays right around the corner, and several sweet treats abound, it’s nice to know we’re starting the day in the right way.

We enjoy mushrooms with any meal, but particularly at breakfast. They add a smokiness and heartiness that goes perfectly with bacon and eggs. Luckily, mushrooms are always in season, but other veggies can be incorporated based on the time of year.

This breakfast will fill you up and leave you wanting more. Perhaps even at second breakfast. This recipe serves one generously. Feel free to double or triple the recipe provided you have a large enough pan. If a band of holiday guests arrives at your door, you’ll need a few more pans.

Fried Eggs, Mushroom and Kale Skillet

Fried Eggs Mushroom and Kale Skillet

Serves one

Ingredients

  • 1/4 cup sliced onion
  • 1/4 cup sliced mushrooms
  • 2 slices bacon, chopped
  • 2 handfuls sliced kale
  • 2 eggs
  • kosher salt and freshly ground black pepper

Directions

  1. In a medium skillet, cook the onion, mushrooms, and bacon over medium heat for about 15 minutes. The bacon will start to crisp, the onions will turn clear and start to brown, and the mushrooms will lose their water and start to brown.
  2. Stir in the sliced kale and cover.Sauté for a minute or two.
  3. Make two small wells in the kale and crack the egg into the wells. Season to taste with salt and pepper. Cover and cook for five to ten minutes on low, depending on how you like your eggs.
